ASPARAGUS SOUP

In later years, Dan would substitute CAULIFLOWER for potatoes. Broccoli can be substituted for asparagus for CREAM OF BROCCOLI SOUP.

 

(Makes four servings)

 

1 1/2 POTATOES

1 small ONION

ASPARAGUS STOCKS

1 can CHICKEN BROTH

1 clove GARLIC

CORIANDER

WHITE WINE

DASH 0F WORCESTERSHIRE SAUCE

WHITE AND BLACK PEPPER

PINCH THYME

 

BOIL DICED POTATOES 20 MINUTES.

 

IN SKILLET, SAUTE ONIONS, GARLIC AND ASPARAGUS IN OLIVE OIL FOR 10 MINUTES.

 

COMBINE POTATOES, ASPARAGUS, ONION AND BROTH IN BLENDER. BLEND WELL AND POUR INTO LARGE SAUCEPAN.

 

ADD WORCESTERSHIRE SAUCE, WINE AND HERBS. SIMMER UNTL HOT.

SERVE WITH PARMESAN CHEESE, GARLIC PITA CHIPS
