DAN'S KILLER RED CHILE

A hearty, satisfying lunch dish - it doesn't have to be "killer;" start with a small pinch of chile powder and go from there. As with Dan's Bolognese Sauce, this is even better the second day.

(Makes 8 servings.)

1pound GROUND TURKEY

1 ONION

GARLIC

SALT AND PEPPER

2 TSP OLIVE OIL

2 pinches SAGE

1 small can TOMATO SAUCE

1 can DICED TOMATOES (14.5 OZ)

3 cloves GARLIC

1 can CHILE BEANS (KUNER'S)

1 can DICED HATCH GREEN CHILES

1 cap VINEGAR

BLACK PEPPER

OREGANO

FENNEL

CUMIN

GROUND CHOCOLATE

3 BAY LEAVES

SANTA FE SIX-CHILE BLEND

CHILE POWDER

PARSLEY

 

BROWN TURKEY AND ONIONS IN OLIVE OIL WITH GARLIC, SALT, PEPPER AND SAGE.

 

ADD TOMATO SAUCE AND DICED TOMATOES, SIMMER 15 MINUTES.

 

ADD ALL REMAINING INGREDIENTS, THEN BEANS AND PARSLEY AND CHILE POWDER TO TASTE.

 

COOK FOR 1/ 2 HOUR COVERED, THEN SIMMER 1/ 2 HOUR UNCOVERED.

 

SERVE WITH GRATED CHEDDAR CHEESE, WITH TORTILLA CHIPS OR OVER SPAGHETTI.
